Custom made tofu from Jamaican chef Clive Birch

This is a  quick recipe for very busy vegetarians who are looking to have a healthy high protein savoury dish to serve with fresh vegetable salad. It is quick because the tofu comes already cooked and all you have to do is heat it in True Sauce or Pure Sauce. It is useful for quick 5-10 minutes demonstration at cooking classes at church events and with work well in a  potluck setting or at weddings. The sauce is made fresh with pure Scottish honey and choice ingredients free from preservatives and additives. However, it is not suitable for vegans and small children. Pure sauce can be used as an alternative.




Fresh tomato base sauce with Scottish honey.


200g tofu slice

100g True Sauce

50g (50ml) water



  1. Place the sauce in a small pan and add the water. Allow to simmer then add the tofu slice. Every 2 minute base the tofu by pouring the hot sauce over it.
  2. Remove from heat and serve with fresh vegetable salad.

Alternatively, the tofu can be served with Pure Sauce, an apple base product with fresh lemon juice and tarragon. This is a vegan and allergen free sauce suitable for small children. It is sweetened with 100% maple syrup and have a very smooth taste and texture.
