This recipe is a quick start healthy Adventurers meal with a combination of carbohydrate, vitamins, minerals, and protein. It is ideal for lunch when the children are busy working with the team leaders to ready the tents, prepare for upcoming events, or socialising.
[PREPARATION TIME: 1 1/2 – 2 hrs] [Covers: 40-45 children and adults]
0.96 kg or 960 g mangetout (julienne or fine string like pieces)
3.00 kg basmati rice (washed)
24 large whisked eggs
6 litres boiling water
0.015 kg or 15 g salt
6 tsp soy sauce
3 tsp curry powder
0.50 kg finely chopped spring onion
0.50 kg tinned garden peas
0.10 kg or 200 g vegetable oil
0.020 kg or 20 g chopped parsley
- Wash rice in a big pot and add 6 litres of boiling water along with curry powder and salt. Mix well and add a little of the vegetable oil. Bring to the boil and leave to simmer on low heat for 40 – 50 minutes until soften.
- While the rice is cooking, scramble the egg in 50 g of vegetable oil. In a large pot, add the rest of the vegetable oil and heat it. Add the spring onion, mangetout, and parsley to the pot and mix then add the soy sauce. after 5 minutes add the garden peas and fry together for another 5 minutes.
- Mix the rice in with the vegetables for 10 minutes. Remove some of the mixture for those who are allergic to egg or do not eat it. Add the egg to the rice and mix in well. Remove from heat and serve with with fresh fruit juice.
